The milling process first begins with the delicate but efficient cleaning process in which the olives are cleansed of their stems, twigs and other debris. The olives are then mechanically crushed into a paste. The tearing of the olive flesh helps release the oil. The next and most important step is the malaxing (or mixing) of the paste. This takes place for about 30 minutes which allows the precious drops of oil to combine into bigger ones. Finally, the oil is placed in a centrifuge in which the oil is separated from water.
